"Dimonios" owes its name to the anthem of the Sassari Brigade, created in 1915 and above all the only unit in the Italian army to be composed exclusively of members from the same region: Sardinia. Therefore, never better wine could have become the symbol of the Sardinian island more than this Cannonau Riserva represents it. A red wine labeled "Sella & Mosca," it is made from pure Cannonau grapes, harvested in the southeast quadrant and other small plots of the estate deemed most suitable. Processed by following a fermentation with long maceration on the skins, it matures for two years in large Slavonian oak barrels, to arrive at a decisive and distinctly territorial character at the same time. It is a Cannonau with a capital "C".
Tasting Notes.: It presents itself to the eye as a beautiful ruby red. The nose is initially set on hints of ripe red fruit, then veers sharply towards hints of Mediterranean scrub, with myrtle, rosemary, pine needles and wet earth composing a beautiful olfactory bouquet. The mouth is creamy and enveloping, balanced between fruit and marine nuances. Long persistence and spicy finish.
Pairings: Excellent with meats, it is best tried with chicken cacciatore.
