The selection of the Donnafugata Oils is enriched with a special novelty: the Extra Virgin Tonda Iblea., a small production of value from the Vittoria estate obtained from the eponymous native cultivar typical of this territory.

La Tonda Iblea  typically grows in the eastern area of the island. In particular, the most widespread area of this type of tree is represented by the provinces of Messina, Catania and Siracusa tonda iblea(but its presence has also been recorded in the territory of Trapani and Agrigento), where it is also known by the synonyms of Giarraffa, Alimena, Bruscarinu, Caloria, Prunara, Tonda Nera and Vitriolo. Used indifferently for table consumption and for the production and sale of extra virgin olive oil, the Tonda Iblea finds its ideal habitat in the hilly areas up to a maximum of about 600 meters above sea level, and is therefore a cultivar that is very resistant to cold temperatures.

This, moreover, makes it rather difficult for fly attacks to occur and allows it to not to resort to pesticides thus preserving the quality of the product unchanged. Resistance to Lead's Evil and Cotonellus is also very good.

A superior category olive oil is born, obtained directly from the olives, through a process of cold extraction and solely by mechanical processes.

The oil Tonda Iblea di Donnafugata is colored bright green-gold; the nose is distinguished by the intense fruitiness, with clear hints of green tomato followed by notes of fresh herbs, artichoke and freshly mowed grass. The palate proves to be intensely fruity, with a excellent balance between bitterness and spiciness; a full-bodied, enveloping and harmonious oil.

Extra Vergine Tonda Iblea is excellent on boiled and grilled vegetables, on meats, and perfectly enhances Mediterranean dishes.

un sapore a tutto tondo

Fino a poco tempo fa, pur essendo siciliana, sconoscevo questo tipo di olive “ tondo ibleo “. Ho acquistato la prima bottiglia, perché mi è piaciuta tantissimo l’etichetta e cercavo un’alternativa originale ai soliti dolci da portare a cena da cari amici. Successone! l’abbiamo provato sull’avocado con una goccia di limone ed una spruzzata di pepe e su del pane tostato con una fettina di fragola ed un gamberetto. Per non farmi un torto l’indomani l’ho acquistato anche per noi e da allora la merenda preferita del mio nipotino è pane, olio, sale …. piuttosto delle catastrofiche merendine
