Botrosecco is produced on the estate Le Mortelle, owned by Antinori in the heart of the Maremma a few kilometers from Castiglione of Pescaia. Acquired in the 1999 the family Antinori from the conviction that the area, still emerging, was highly suited to the production of high quality wines. The winery, partly underground on top of the hill overlooking the estate, was built with an eye to regard to the impact environmental. Built only with natural materials, it uses the thermoregulation of the rocks in the soil, and the wine production process is designed by "fall," with the harvest being taken to the upper floors after the grape harvest, to the winemaking to the aging that takes place in the basement floors in barriques that takes place in the basement floors.


The Botrosecco is the product of the estate's two most important types of vineyards, Cabernet Sauvignon, which constitutes its 60% and the Cabernet Franc which completes the whole. Harvested in September, the Cabernet Franc, which gives theelegance and the structure to the wine is harvested in the second half of the month, while Sauvignon, with its typical aroma of red fruit, ripens in the last week. The 170 hectares of vineyard soils are medium-textured, sandy and loamy with a siliceous-clay composition. Upon arrival at the winery, the best grapes are destemmed and gently crushed and brought to fermentation in tanks of steel stainless at a temperature of 25°C, then it is transferred to other tanks where fermentation takes place malolactic, completed by the end of the year. Before therefinement in the bottle the wine rests in barriques for 12 months.

Ruby red. Rich and intense, characterized by sensations of ripe small berries, such as raspberries and blackberries; hints of wild mint and eucalyptus combine with spicy notes of white pepper, completing the flavor profile. Enveloping, savory, with fine tannins and a lingering aftertaste of fresh fruit and cocoa.

Vinification Upon arrival at the winery, the grapes, carefully selected at harvest, were destemmed and gently crushed and transferred to stainless steel tanks; here the alcoholic fermentation at a temperature of about 25 °C so as to enhance the characteristic varietal aromatic component and maintain greater fruit integrity. During the maceration, which lasted about 15 days, appropriate soaking of the pomace cap was performed to extract only the most valuable tannins. Subsequently, the wine was transferred to stainless steel tanks, where the malolactic fermentation, completed by the end of the year.
Aging 12 months in barrique before theaging in the bottle.
