Sant'Antonio Scaia Bianca Estate is a still white wine produced at the Sant'Antonio Estate. The very high quality of this wine has allowed it to obtain the label IGT (Typical Geographical Indication).
The winery is managed by Armando, Massimo, Tiziano and Paolo Castagnedi, having inherited not only the structure, but also the passion for viticulture from their father. Over the years the Castagnedi brothers expanded the hectares of vines at their disposal and decided to set out to start producing their own wine, Scaia Bianca, made from mixed quality vines, namely the 50 percent Garganega, the 30% Trebbiano di Soave and the 20% Chardonnay. The processing of the vines, located in Colognola in Veneto, is done according to the mixed training system, Guyot and a Pergola.
After harvesting, which is strictly by hand, the grapes are selected with enormous care and transported to the winery, where the soft pressing by means of a cold pneumopress. Temperature control of the machinery ensures that the bunches retain all their properties. Next, the maceration, also cold maceration, for a short period ranging between the 10 to 12 hours.
The next stage consists of the alcoholic fermentation, in steel containers, carried out at low temperatures and with selected yeasts. The fermentation and aging phase lasts a few months, until April. From this precise and competent workmanship comes a great wine, representative of its terroir and loved by critics. Straw yellow with greenish highlights. White flowers of acacia, jasmine, bouquet of citrus fruits such as pineapple, grapefruit and orange, apple pear and mango and light note of banana. Fresh and pleasant given by well-supported acidity. Well balanced softness and savoriness make it inviting and intriguing.
