History The ORVIETO Controlled Denomination of Origin was recognized in 1971 and over the last forty years, it has experienced extraordinary growth in both quantity and quality: Orvieto is now one of the best-known Italian white wines in the world and alone accounts for about three-quarters of Umbria's D.O.C. wine production. The area DOC is divided into Orvieto Classico, which represents the area around the tufa cliff on which the city of Orvieto and its surroundings are located, and into Orvieto, which completes it to the north and south. The geological components of the territory - of volcanic origin - combined with the favorable and peculiar microclimate that distinguishes the valleys of the Paglia and the lower Tiber, are at the basis of the oenological fortunes that have been one with the city since time immemorial. It is no coincidence, in fact, that Orvieto is one of the few cities in the world whose name coincides with that of its own territorial wine.

Harvest Second week of September.
Vinification The grapes, Procanico and Grechetto, were harvested separately and then destemmed and pressed very softly. The must obtained was cooled to a temperature of 10°C, to promote its natural clarification, and then transferred to stainless steel tanks, where the alcoholic fermentation at a temperature not higher than 18° C
Aging The wine was then stored in stainless steel tanks at a controlled temperature of 10°C. The processing in small masses, just before bottling, allowed the wine to maintain its fresh and fragrant.
