Merlot Feudi del Pisciotto is produced by the winery of the same name included in the Relais and restaurant. We are located in the heart of Sicily, a few kilometers from Caltagirone, Ragusa and Noto, near the Roman Villa, which has remained intact, near the sea. This is a still red, made from a blend composed of 100% Merlot grapes. The grape variety is native to the Gironde, a region in southwestern France, specifically Bordeaux. Dating back to the 1700s, the berry is medium-sized, blue-black in color with a pruinose skin. The name Merlot comes from the blackbird's special fondness for its juicy berries with a rich bloom-rich skin. The vine grows on hillsides, likes a cool, mitigated climate, and suffers from drought.The training system can be Guyot or marquee, which serves to protect the clusters during cultivation. Grapes are harvested in the last week of August and are done in baskets, manually as is tradition. Vinification is held in steel barrels, where the so-called temperature-controlled malolactic fermentation also takes place. Aging of the wine proceeds for at least 10 months, inside French oak barrels, half new and half second-passage. Bottle aging continues for another 8 months, after which Merlot Feudi del Pisciotto is ready to arrive on the customer's table. Intense red. Delicately vegetal nose, hints of blackberries and with a nice spiciness. The palate is persistent, enveloping and with a long finish.
