From the fantastic hills surrounding Valdobbiadene come the glera grapes that create "Senior." Prosecco Superiore Extra Dry DOCG that is very well-balanced and surprises with its enveloping aromas and smooth sip. The grapes ferment at a controlled temperature with selected yeasts in steel, and then undergo the "presa di spuma" and remain to age for a variable period, between 1 and 3 months. A round and harmonious bottle, with which Bortolomiol pays homage to the classicism and winemaking tradition of these areas.
Tasting notes: In the glass it has a straw yellow color, with some light reflections tending to gold and greenish. The perlage is fine and persistent. The aromas on the nose tell of fruity and citrus scents, which blend well with notes of lily of the valley, hawthorn and herbs. On the palate it is balanced, smooth and extremely drinkable.
Pairings: It is endowed with great gastronomic versatility, which also makes it perfect for aperitifs. Throughout the meal it finds its consecration with fish, shellfish and crustacean dishes, as well as in vegetable fritters. Absolutely try it with crespelle with ricotta and spinach.
