Antinori Tomaresca Castel del Monte Pietrabianca is a wine produced in Bocca di Lupo, an Apulian estate founded and run by the Antinori family. The name comes from white stone, a building material found in large quantities in Puglia. The wine is made from native Apulian grape varieties: small amounts of Chardonnay and Fiano grapes fermented in wood and steel, respectively.


The Antinori Tomaresca Castel del Monte Pietrabianca is a chardonnay made by gently pressing the grapes, which are then rested in stainless steel tanks at 10°C. The chardonnay is then placed in oak barriques, where it ferments at a controlled temperature, finishing the process on the lees. The fiano, on the other hand, undergoes fermentation in stainless steel, at 16°C, to enhance its acidity. The wine finishes its aging in bottle, for a period of 5 months. The contrast between the two different maturations makes the wine perfectly balanced, as it is a marriage between the full flavor of the wood and the freshness of the grapes vinified in steel. The flavor is fresh, of citrus and tart fruit, accompanied by the savoriness of maturation in oak barrels. The wine, with its delicate contrast, is perfect to accompany white meat dishes, fish and light main courses: in fact, it will succeed in allowing the food to be enjoyed with freshness and genuineness, given the balanced acidity of this product. Intense straw yellow with greenish highlights. Fruity with hints of white peach and exotic fruits, with well blended vanilla notes of wood. Smooth entry, good persistence and structure. Savory wine with good acidity and freshness.

Vinification The grapes are soft-pressed and the must obtained is placed in stainless steel tanks at a temperature of 10°C in order to achieve natural decantation. Subsequently, racking takes place in new French and Hungarian oak barrels, where it performs both the alcoholic fermentation as well as the malolactic fermentation.
Aging After a refinement of six months in barrique, the wine is racked into stainless steel tanks to be promptly bottled. This is followed by a further aging of 5 months in bottle

Other L'year was characterized by a fairly hot spring and summer, with significant temperature swings between day and night. Agronomic management particularly aimed at maintaining proper shading of the grapes allowed a balanced ripening of the white grapes of the Bocca di Lupo Estate, such as to enhance the considerable potential aromatic while maintaining good freshness and acidity.
