Only a few areas in the world have the capacity to produce grapes suitable for making a sparkling wine base. Tasting Notes: Minute and continuous perlage. Straw yellow. Enchants with elegant tones of peach, red currant, cedar, lily of the valley and white flowers, fine spices and a touch of rye. In the mouth it is gritty in flavor development, taut and laden with mineral savoriness.

Harvest Grapes are harvested by hand in small containers in the first decade of September and pressed whole in the marmonier.
Vinification The different selections of Pinot noir age on their own yeasts and partly perform the malolactic fermentation. In late spring the cuvée is made, an extraordinarily important moment for quality of the classic method.
Ageing Before the summer with the draught begins the long journey in the bottle in which, in addition to the second fermentation, the yeasts will accompany the sparkling wine for at least 48 months toward the time of disgorgement and then rest in the cellar another 3 months before marketing.
