he Bramito della Sala is produced by Antinori on the land adjacent to the Castello della Sala, an ancient medieval castle built in 1350 by supporters who came to Italy with Charlemagne with the aim of conquering Orvieto. Given the area's high vocation for white wine production, the Antinori family decided in 1940 to buy the castle, which had been neglected for decades, and restore it to its former magnificence. In the 170 hectares of land, only white vines are produced, except only for pinot noir, both native and non-native, in order to express with each wine a modern vision of an ancient terroir. The winery has a modern conception of winemaking and is designed to ensure quality and freshness in the wines produced, but without detracting from the historic cellar already present since the 16th century in the basement of the stronghold.
Bramito della Sala is made only from Chardonnay grapes, which in the soil rich in fossil sediments that tends to be clayey, is able to express its strong elegance and minerality. Harvesting, which begins in the second half of August, takes place only of the best, healthy ripe grapes with the best aromatic profile. Once they arrive at the winery, they are destemmed and softly crushed, and the must is cooled with its skins to 10°C, before being transferred to stainless steel tanks for a short maceration, to extract and bring out all the flavor and aroma of the grapes. Fermentation is divided, one part in wood and the remainder in stainless steel vats at a controlled temperature of 16-18°C, only for the part in wood does malolactic fermentation take place. Before bottling, the wine is blended in order to blend and achieve final stability. Brilliant yellow with greenish highlights. The nose is complex and fresh, with delicate aromas of tropical fruits, pineapple and citrus fruits, which combine with light sensations of hazelnut butter and vanilla. The palate is well structured, elegant and mineral; delicate fruit notes return accompanied by excellent freshness and balance.

Vinification | Upon arrival at the winery, the grapes were destemmed and softly crushed. The must with its skins was cooled to 10 °C and transferred to stainless steel tanks for a short maceration of about 2 to 4 hours for the purpose of extracting and enhancing the profile aromatic profile and taste of the grapes. The different batches were transferred partly to wood and partly to stainless steel vats where the alcoholic fermentation at a controlled temperature of 16-18 °C. Only the portion in wood then went through the malolactic fermentation. |
