A base of chardonnay grapes, to which is added a small percentage of pinot noir, makes up the cuvée of "Leonia", Spumante Brut labeled "Marchesi Frescobaldi" and processed according to the rules of Metodo Classico. It is a Brut that perfectly embodies the elegant style belonging to the wines of Castello di Pomino: expressive and intriguing, it is able to conquer with its articulated and complex aromas, and with its creamy and well harmonized flavors. It is a Spumante, the "Leonia," that comes from a land traditionally devoted to the production of great reds, and for this reason embodies the desire to take new paths with courage and determination. A Brut to break out of the most classic schemes, and to discover that the present is indeed based on the past, but also needs to place hope in the future.
Tasting notes:Crystal clear straw yellow to the eye, with abundant golden reflections and fine, persistent perlage. The nose opens on pleasant floral notes, which in the second instance merge with memories of yeast and brioche, then give way to evolved nuances of honey and dried apricot. The sip is characterized by a well-calibrated acid shoulder, creamy in structure and of excellent length.
Pairings:For aperitifs, it is ideal for pairing with warm seafood salad.

Harvest | The harvest was done by hand in 15kg crates during the coolest hours of the day. |
Vinification | Once the grapes arrived at the winery, they underwent a slow and gentle pressing that allowed an extraction of the must from the heart of the berry. Once the cuvée was obtained, a 12-hour cold clarification was carried out, which allowed for the clarification crucial in creating a qualitative harmony typical of Leonia. Fermentation took place in stainless steel tanks at a constant and controlled temperature; a part was fermented in wood. |
Aging | In March following the harvest, the blending of the different cuvées of Chardonnay and Pinot noir took place, followed by tirage (addition of liqueur de tirage) and refermentation in the bottle with subsequent aging on the lees for at least 32 months. The operation was concluded with remuage and dégorgement which was followed by a further refinement in the bottle. |
