This Ripasso Superiore was born within the Venetian excellence Zonin1821, nestled in the heart of the famous Valpolicella area. This wine is made mostly from Corvina grapes and Rondinella and Molinara grapes, harvested meticulously by hand. Following the traditional Ripasso technique, the must is passed over freshly pressed Amarone pomace. This technique slightly increases the alcohol content and enriches the organoleptic potential of the wine, which subsequently ages 12 months in 30 HL Slavonian oak barrels.
Tasting Notes.: Zonin's Ripasso Superiore shows an intense ruby red color. The nose arrives fine and complex, with vinous tones and well-defined notes of cherry and cocoa. In the mouth it shows good structure, with a pleasantly fruity aftertaste with light spicy notes.
Pairings: Perfect with first courses and well-aged cheeses, excellent with the traditional pastizada de caval (horse stew).
