"Symposio" is a Sicilian Red wine in which softness and minerality are the key to a highly satisfying tasting experience, with which the winery Principi di Butera unveils the international profile of Sicily. That's right, because this Terre Siciliane IGT is the result of a blend based on cabernet sauvignon, merlot and petit verdot, whose grapes, once they reach the winemaking facilities, vinify separately, fermenting for four weeks and macerating at a controlled temperature. Then comes the aging phase, in which the wine remains for 18 months in 350-liter tonneaux of first- and second-passage French oak. A classy bottle, perfect to accompany the finest recipes where meat plays the undisputed starring role.
Tasting Notes: On visual examination it shows a ruby red color, intense and deep. The nose teems with fresh, mineral and fruity aromas, also enriched by slight more balsamic sensations. The palate is full-bodied, round, full, with a warm sip, enlivened by a pleasant freshness that characterizes the sip.
Pairings: Excellent with main courses of meat, both white and red, cooked with different preparations. It is a knockout with a pasta alla norma.
