Prunotto Nebbiolo d'Alba Occhetti is produced by the Prunotto winery, which today specializes not only in the creation of red, white and sparkling wines, but also rosé wines and spirits of various kinds. It was founded in 1923 when wine-maker Alfredo Prunotto decided to take over the Cantina Sociale "Vini delle Langhe" winery and bring it back into vogue.
With the efforts of Alfredo and his family, wine production began. The winery then passed to his friend Beppe Colla, who allowed it to grow and continue the production of excellent quality wine.
Nebbiolo vines grow luxuriantly in the Alba area of Piedmont, on a very special soil composed partly of sea sands and partly of gravelly, clay-limestone sediments.

The harvest of Occhetti Nebbiolo d'Alba takes place in early October. After the harvest, the grapes are brought to the winery, cleaned and crushed.
Maceration and fermentation take place for about 10 days, at a controlled temperature of 29°. This is followed by the first stage of aging, which takes place in two different types of containers. Part of the product is aged in barrels, while another part is aged in third-passage barriques. This phase lasts about 12 months.
The wine is then bottled, but before marketing it needs an additional aging phase. This lasts about 4 months in the cellar before being put on the market. Today Prunotto Nebbiolo d'Alba Occhetti has the DOC (Denominazione di Origine Controllata) label. Ruby red of good intensity tending toward garnet. Elegant bouquet with hints of raspberries, rose and licorice. Full, harmonious flavor with a long aftertaste. Occhetti Nebbiolo is a smooth and elegant wine.

Vinification The grapes that arrived at the winery were destemmed and crushed. The maceration lasted about 10 days at a maximum temperature of 29 °C. The malolactic fermentation was completed before winter.
Aging L'aging of 12 months took place partly in 70 Hl barrels and partly in third-passage barriques. The further aging in bottle lasted for 4 months in Prunotto cellars before shipping.

Pairing Because of these characteristics it goes well with warm appetizers, first courses and meat dishes that are not too rich.
More Red color ruby of good intensity tending to garnet. Aroma elegant with hints of raspberries , rose and licorice. Flavor full, harmonic and long aftertaste. Occhetti Nebbiolo is a wine soft and elegant. Because of these characteristics it goes well with warm appetizers, first courses and meat dishes that are not too rich.
