Biancolilla Is a delicate and slightly fruity, monocultivar of Pantelleria of extraordinary elegance, characterized by a slightly fruity bouquet, with hints of ribbed tomato, herbs, rosemary and thyme. A versatile oil that excels on fish, salads and generally in delicate preparations such as a gourmet mayonnaise.

Harvesting period harvesting takes place at the beginning of olive veraison, when the accumulation of polyphenolic substances is at its maximum; olives were picked from October 10 to 14.
Harvesting method Hand-harvesting directly from the tree (manual grazing) of olives grown on terraced volcanic soils, with pruning of low branches toward the ground to expose the least leaf area to the winds.
Methods of extraction milling immediately after harvesting, using a cold, continuous-cycle extraction system, which carries out the gramolatura stage (mixing of the olive paste useful for separating the oil) in a controlled atmosphere, allowing the aromatic components to be best preserved.
Analytical data  Acidity: 0.13 % in oleic acid; Peroxides: 8.9 meqO2/Kg expressed as oxygen; Total polyphenols: 119 mg/Kg in caffeic acid.
Tasting Notes. Biancolilla 2019 has a light structure, is delicate and extraordinarily elegant; the bouquet is characterized by a light fruitiness with hints of ribbed tomato, herbs, rosemary and thyme.

Return and Refund

The goods must be returned intact, undamaged, and in the exact same condition in which they were delivered by the courier.
