After a 15-day maceration on the skins, this Barbaresco DOCG, by Prunotto, rests for at least a year in oak barrels and in the bottle for ten months. It gives a rich and powerful drink, but at the same time also refined and elegant. It has character to spare and achieves high quality standards.

Tasting Notes.: Intense garnet red in the glass. Demonstrates an olfactory framework in which memories of raspberries, red cherries and plums combine with hints of cinnamon, licorice, chocolate and underbrush. Full-bodied and driven by an elegant tannic texture, the palate reveals itself to be structured and elegant at the same time. Long in persistence.

Pairings: Perfect paired with red meats, game or venison, it is excellent with beef stew with potatoes.

Soil composition Soils of an age referable to the Tortonian-Messinian period, so-called "fossil St. Agatha marls." Rich in elements such as manganese, zinc and boron, they are composed of fine particles that tend to form easily erodible laminar layers (silty marls).

Vinification The selected grapes were destemmed and crushed. The maceration lasted about 15 days at a maximum temperature of 30 °C. The malolactic fermentation was completed before the end winter.
