Sasseo represents one of the spearheads of the winery and is now one of the most appreciated wines by international critics; as the name on the label suggests, it comes from the limestone "stones" that emerge from the red soil of Salento. The clusters are harvested late, in contrast to the classic early harvesting of Primitivo, from which the name is also derived. After gentle crushing, the must begins fermentation at a controlled temperature and then matures for a year in Slavonian oak barrels, followed by a further period of bottle aging. The result is a thick, muscular wine that can be simultaneously graceful and elegant, with a distinct sense of territoriality.
Tasting Notes.: Dark, almost impenetrable ruby red color. Intense and complex on the nose: it smells of ripe fruit, sour cherries and cherries under spirits, then notes of bell bell pepper and a spice that oscillates between cinnamon and saffron. In the mouth it has well-expressed tannins, but filed down by a skilful use of the barrel, accompanied by the right acidity that ensures a smooth sip. Finish of great persistence.
Pairings: Perfect to accompany earthy menus on the table, we recommend it with roast lamb and aged cheeses.
