Young cured meats, cold meat dishes, raw and grilled shellfish. Salad vegetables.
Winemaker's notes
The grapes, after being harvested and destemmed, are cooled and then gently pressed. Fermentation and subsequent aging take place in thermo-controlled stainless steel vats.
History
From the beginning, the production of this wine exploited the great advantage of the tufa soil on which the city of Orvieto is built. The low and constant temperatures of the cellars dug into the soil made possible long fermentations and the creation of wines of great quality.
