Born in 1997, Ruffino's "Modus" represents the quintessence of the best Supertuscans, those wines that since the 1980s have shown how much the whole wide Chianti area could express in terms of intensity and elegance. A red in which Sangiovese, the protagonist, gives the wine hints of cherry and ripe red fruits. Merlot gives roundness and freshness, enriching the flavor profile with notes reminiscent of blackberry, while cabernet sauvignon brings structure and elegance. The wine is left to mature for about a year in French and American oak barrels before further bottle aging.
Tasting Notes.: Ruby red color preparing for the richly fruity nose in which cherry, strawberry and plum emerge accompanied by tobacco, capers, olives and spices. Full-bodied on the palate, with soft, refined tannins and a vinal that returns fruity with vanilla scent.
Pairings: Throughout a meal, it accompanies egg pasta dishes with game sauce typical of Tuscan cuisine. Excellent with stewed meats and aged cheeses such as taleggio and pecorino.
