Vinification | Upon arrival at the winery, the grapes were selected at two separate times: immediately after picking and then destemming, to ensure that only the best ones reached the fermentation tanks. Fermentation and maceration took place in temperature-controlled stainless steel tanks for 15-20 days. |
Aging | After racking operations, the wine was transferred directly into barrels, where, by the end of the year, took place the malolactic fermentation. In February the best vinified plots were selected and blended. Guado al Tasso was then transferred back to barrique new French oak where it remained to age until bottling. |
