The most deeply rooted winemaking traditions of the Irpinia area are all to be found in the sip of "More Maiorum," Fiano di Avellino whose label refers to the Mastroberardino winery. Left to ferment in wood and then aged for about six months in acacia barrels, this is a Fiano that takes us back in time, when whites in Campania were often precisely aged in wooden barrels. Aged for an additional two years in bottle before release, it is truly a Fiano di Avellino like no other we encounter.
Tasting Notes.: It presents itself to the eye as a beautiful intense straw yellow with golden highlights. Articulate and complex on the nose, it opens with floral scents of acacia and linden, followed by citrus notes and hints of herbs. The taste is consistent and vertical, supported by a nice acid shoulder, pleasantly savory and of good length.
Pairings: Excellent with both fish and white meats, it is perfect with pan-fried chicken.
