This Fiano is the result of a gamble the Zonin family wanted to make, going to reintroduce in the Apulian Salento region a grape variety that was already known in these very areas at the time of Frederick II of Swabia, proving that even in this region a white of excellence can be created. Varietal clones of fiano were recovered with difficulty, and the path of designing this bottle took the right amount of time for the Masseria Altemura team. The result, however, is excellent, with a balanced, flowing Fiano IGT that is very pleasant on the palate. The grapes, carefully selected during the harvest, are picked well ripe and then fermented in steel at a temperature between 18 and 25 degrees. The wine then rests for a few months, again in steel, until bottling operations begin. A label that encapsulates the value of the history and winemaking traditions of the Salento terroir.
Tasting Notes: It reveals itself to the eye with a very bright color, recalling the shade of straw yellow. The nose has mainly fruity sensations, which alternate with order and balance. On the palate it is light-bodied, connoted by a refreshing sip, which invites drinking.
Pairings: It finds its gastronomic completion by accompanying fish-based first and second courses, cooked with typical Mediterranean recipes. Also excellent with legume dishes, especially with recipes based on broad beans and chicory.
