The grapes for this Vietti signature Timorasso come from vineyards located in the municipality of Monleale, characterized by soil rich in clay and limestone. After manual harvesting, the grapes are immediately sent to fermentation, partly in ceramic, partly in wooden vats and partly in stainless steel, for a total aging of 10 months, during which the wine remains in contact with the fine lees that have remained in suspension and that, throughout the time, are moved by frequent batonnage.
Tasting Notes.: in the glass it is clear, deep yellow in color with greenish reflections; fruity aromas reminiscent of pear, peach and floral scents such as acacia flowers and hawthorn; there is also a characteristic note of honey. After 2/3 years, mineral notes are more noticeable, in some cases accentuated by the typical hint of hydrocarbon, which embellishes the wine. In the mouth it is dry, warm and soft, very balanced; it has no edges and in the finish a good acidity is well perceived that gives a lot of length and persistence to the palate.
Pairings: Raw meat, cured meats that are not too mature, hot and cold appetizers, first courses even of marked savoriness and white meat preparations. After a few years in the bottle it becomes a perfect wine to pair with even aged cheeses.
