Winemaker's notes
Alcoholic fermentation and maceration are continued for about 15 days in temperature-controlled stainless steel vats with frequent pumping over. After malolactic transformation, the wine is aged in large temperature-controlled stainless steel and cement vats for several months before bottling.
History
The Chianti Superiore appellation is the transitional term between Chianti DOCG and Chianti Classico, but it holds to a particularly strict specification.
