Tasting Notes: To the eye is a beautiful straw yellow. Predominantly fruity nose, characterized by references to pineapple, mango and tropical fruit in general, then enriched by subtle vanilla and woody nuances. The taste is velvety and full-bodied, as fruity as the nose and of excellent length.
Pairings: excellent to accompany seafood cuisine, it is ideal to be paired with clam sauté.
Considerations: destemming of the clusters, cold maceration, soft pressing and fermentation at controlled temperature, then five months of aging, part in steel and part in tonneau and large barrel. Bottling in March following the harvest. Few secrets, few rules and simple recipe, but excellent result, given by the Chardonnay "Saleit," a white wine from Alto Adige produced by Kaltern. Rich in fruit and never out of tune, it expresses itself with a timely and extremely pleasant sip. Choose it to accompany entire seafood menus, and you certainly won't have any nasty surprises.
