Vinification | Upon arrival at the winery, the grapes were destemmed and placed on a sorting table for further selection so that only the perfect berries reached the vats of vinification. The alcoholic fermentation took place in stainless steel tanks at a controlled temperature of 26-28 °C. The maceration lasted for 15-18 days and was managed with punching-down interspersed with délestage and brief pumping-over at the end to perform a gradual and gentle extraction. During this stage, it was decided to remove a good part of the seeds to prevent them from bringing astringent sensations. |
Refinement | Once fermentation is complete, the wine is transferred to barrique of oak, where the malolactic fermentation and the necessary refinement. Following bottling Bocca di Lupo rested at least 1 year in bottle. |
