Alois Lageder's "Casòn Bianco" was born out of the ability of this great producer, a pioneer of biodynamics in Italy, to explore the potential of the vocated Alto Adige.
The wine is centered on the proper characteristics of viognier, which develops a remarkable typicity here. The vineyards, with vines between 20 and 60 years old, are those of Casòn Hirschprunn in Magrè, located at an altitude between 230 and 360 meters above sea level and characterized by sandy, stony soil with dolomitic lime.
Spontaneous fermentation in barriques, where it then ages on the lees for 11 months, followed by further aging in wooden barrels.
"The taste of the unpredictable," from the words of Alois, fully defines the nature of this Casòn Bianco that knows how to surprise from the first sip and excite those who want to look beyond the usual Alto Adige white.
The prize is great for those who approach it, a wine that is intense from the first moment, evolves in the glass and also lends itself to good aging, up to ten years, for those who want to explore the moment when austerity balances initial fervor.
Tasting Notes.: In the glass it is a brilliant golden yellow color characterized by good clarity.
The nose is intensely aromatic, fruity with emphasis on candied fruit, summer peach, dried apricot, oranges and a touch of exotic spices fused with vanilla.
In the mouth it shows a full body and well structured with roasted aromas in evidence, savory and with excellent freshness. Good aromatic persistence.
Pairings: Its structure and aromatic characterization allow it to be widely paired with the entire meal, ranging from elaborate and flavorful fish to shellfish, white meat and poultry.
For an excellent marriage beyond territorial conventions, try it with rice noodles with shrimp and vegetables.
