Tasting "Il Quercione" is very useful to discover how much Sangiovese can express even several years after the harvest: in fact, it is not often that one comes across a Brunello Di Montalcino Riserva DOCG endowed with this completeness of taste, and with an olfactory spectrum so well exhaustive of the potential of this grape variety over time. The grapes macerate for 25 days at a temperature of 30°C, then age in oak barrels for 24 months and in glass for a further 3 years. A slow and painstaking production, resulting in a bottle more unique than rare, to be reserved for great occasions.
Tasting notes: In the glass it manifests itself with a ruby red color, very deep and impenetrable. Broad and enveloping are the scents that manifest on the nose, with notes of berries, leather, leather, licorice, tobacco and ash. On the palate it is opulent, rich, almost tactile, with very well worked tannins. It closes with a decidedly persistent finish.
Pairings: An important structure, thus requiring dishes with elaborate preparations. Excellent with game and red meats, it also pairs well with white Alba truffles and very mature cheeses. A knockout with venison stew.
