The nebbiolo grapes, from which Elio Grasso's Barolo Ginestra DOCG "Casa Maté" was made, were harvested from vineyards forty years old. After fermentation, which took place in steel and at a controlled temperature, the wine matured in Slavonian oak barrels for about thirty months. It was also completed with a ten-month aging in glass. It shows uncommon character and personality, revealing itself to be elegant and refined.
Tasting Notes.: Ruby red with garnet reflections at the glass. It lets you perceive a persuasive and complex olfactory bouquet, in which ripe red and black fruit is enhanced by deep spicy scents, hints of tobacco, and balsamic and mineral notes. The sip is elegant, characterized by excellent tannins, savory and vibrant. The persistence is also excellent.
Pairings: Perfect for the most important and formal occasions, it is ideal to pair with truffle woodcock.
